Creamy Garlic Dressing

3/4 cup low-fat Cottage cheese
3/4 cup nonfat milk
2 tablespoons Cider vinegar
1 envelope Italian salad dressing mix
1 clove garlic
salt and pepper to taste (optional)
Combine all ingredients in container of an electric blender; process until smooth. cover and chill thoroughly. Eventually season with salt and pepper. Serve over salad greens. Makes 6 servings.

Lemon Vinagraite

1/4 cup extra-virgin Olive oil
2 tablespoons freshly squeezed lemon juice
3/4 teaspoon fresh thyme leaves, chopped
1 clove garlic, minced
3/4 teaspoon salt
pinch freshly cracked black peppercorns
In a jar or bowl, combine olive oil, lemon juice, thyme, garlic, salt, and pepper. Store, covered, in the refrigerator. Serve at room temperature. Yields 1/4 cup.

Maple Vinagraite

3/4 cup maple syrup
1 teaspoon salt
1/2 cup rice vinegar
1 cup extra-virgin Olive oil
1 1/2 teaspoons ground mustard
fresh ground pepper
In a blender or food processor, combine maple syrup, salt, rice vinegar, Olive oil, ground pepper and ground mustard. Whirl 1 minute or until well mixed. Store, covered, in the refrigerator. Serve at room temperature. Yields 2 cups.
