Cranberry Nut-Tassies

1 (3 ounces) package Cream cheese
softened 1/2 cup butter
1 cup flour, softened
Filling (see below)
Filling:
1 egg
3/4 cup brown sugar
1 teaspoon Vanilla
1/3 cup fresh cranberries finely chopped
3 tablespoons finely chopped pecans
Combine dough ingredients. Chill for 1 hour. Form into 1 inch balls and press into miniature muffin tins. Combine Filling ingredients. Spoon Filling into shells. Bake at 325°F for 40 minutes or until brown. Makes 24 servings.

Valentine Lemon Pie
(No-Baking Pie)

1 package english cookies
1 cup lemon juice (about 6 lemon juice)
1 glass fresh cream
1 glass sweetened condensed milk
pink or red coloring food
lemon peel for garnish
Mix together fresh cream with condensed milk and lemon juice. Add coloring food (pink or red). Mix very well and reserve until mixture adquires good consistence and color. Dip each and every cookie in this mixture and place them as a layer all around in a glass form (bottom and sides). Finish last layer with cream mixture over top. Decorate with lemon peel, or edible red rose petal or peppermint leaves, cocktail cherries (or even all of them, just let your fantasy flow). Very Important is to place pie in refrigerator for at least 3 hours (better more than 6) before serving.
Note from Barbiel: This is a very beautiful no-bake pie. And you can use your imagination to do it the way you think it suits you better for your ocasion, holiday, party or necessity.
You can adjust it by adding some more spicies like Vanilla sugar or any other ingredient mixed together and also reducing part of  the lemon juice (6 lemons its really a lot) for some other fruit Liquer your preference, such as Cherry, Orange or any other different too: Bayley, Rum, etc
Using green coloring food and Mint Liqueur will also turn your Valentine Lemon Pie into a St. Patrick's one.
Or maybe a yellow/orange color for Easter...
 It's your choice ;o)

Valentine Baked Apples

4 medium-sized apples
8 tablespoons brown sugar
4 teaspoons butter
1/4 teaspoon ground cinnamon
raisins in Rum (optional)
whipped cream (optional)
Rub the apples, then core them. Place in a baking dish. Fill each center with 2 tablespoons sugar, 1 teaspoon butter, 1/4 teaspoon cinnamon and raisins in Rum, if desired. Add 1/4 inch water to the pan. Bake 30-40 minutes at 375°F. Serve warm with whipped cream (optional).
Suggestion from Barbiel: Can be served with Vanille ice cream too. You may substitute any Liqueur your preference for raisins in Rum. Its simply delicious !!!
