
Banana
Toast

1 cup sliced banana
3/4 cup orange juice
1/2 teaspoon ground cinnamon |

slices whole wheat bread
1/2 to 1 teaspoon vegetable oil

Combine the
banana, juice and cinnamon in a blender; process
until smooth. Pour the mixture into a shallow pan
or bowl. Dip the bread in the mixture and turn it
gently to coat both sides. Lighty oil a non-stick
skillet and place over medium heat until hot. Add
the bread slices, frying them until they are
golden brown, 2 to 3 minutes on each side. Serve
with maple syrup. |

Simple
Fancy Yogurt

1 cup
vanilla yogurt
1/4 cup raisins |
1/2
cup unsweetened pineapple chunks, drained
1 small orange, peeled and sectioned |
Combine all
ingredients in a medium bowl. Spoon into serving
dishes and serve. |

Cereal Bars

1 cup
white sugar
1 cup white syrup
1 cup peanut butter |
6
cups Special K Cereal
1 cup chocolate chips

Boil sugar and
syrup to a rolling boil. Remove from heat and add peanut butter.
Mix well. Pour over cereal in large mixing bowl. Mix until
cereal is coated. Melt both kinds of chips together in double
boiler or microwave. Spread over the top of cereal after it is
pressed into buttered 9 x 13 inch pan. |
