Spicy Apple Drink

6 cups cran apple drink
12 whole cloves
6 cups Ginger Ale
1/2 cup lemon juice
4 cinnamon sticks, broken
In a saucepan combine cran-apple drink, cloves and lemon juice. Heat to boiling point. Remove from heat, remove cloves, add cinnamon sticks and steep for 15 minutes. Remove cinnamon sticks. Add Ginger Ale and garnish cups with fresh cinnamon stick stirrers and an orange slice. Serves 12.

Cardamon Milk
(Popular drink from North India and Bengal)

3 tablespoons  white poppy seeds dry roasted in a pan
15 blanched almonds
1 cup water
3 cups whole milk
1 tablespoon poppy seeds
1/2 teaspoon cardamom seeds
sugar to taste
 
Dry roast poppy seeds in a heavy frying pan over low heat. stiring the pan often so as not to burn it, for about 5 minutes. Combine the poppy seeds, almonds and water in a blender or food processor fitted with the metal blade and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add 2 cups milk and further blend on low speed for about 15 seconds. Pour the mixture through a strainer over a pan. Press out as much liquid as possible, then add the remaining milk and the cardomom seeds. Stirring constantly, bring to a boil over moderately high heat. Reduce the heat to low and simmer for 2 minutes. Add the sweetner and serve warm.
Note: Indians will pour the milk back and forth from one pan to another to make the milk frothy much like a low tech cappuccino machine. The frothy milk is then served.

Almond Honey Milk

1/2 cup blanched almonds
2 cups milk
1/4 teaspoon of cardamom powder or 1/2 teaspoon Vanilla
honey to taste
Add almonds and water in a blender or food processor fitted with the metal blade and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add 2 cups of milk and further blend on low speed for about 15 seconds. Heat the milk blend to a boil. Pour the mixture through a strainer over a pan. Press out as much liquid as possible, then add the cardamom seeds. Stirring constantly, bring to a near boil over moderately high heat. Reduce the heat to low and simmer for 2 minutes. Add the sweetener and serve immediately.
