|Green Bean Casserole
2 cans of green beans
1 can of cream of mushroom soup
1/2- 3/4 cup of milk
1/4 pound of shredded american cheese
small can of dried onions
pepper to taste (as you like)
|Mix soup, milk and
cheese. Microwave for 2 mins. Remove and stir. Add green beans.
Microwave for another 2 minutes. Stir. Continue microwaving
until cheese has melted. Top with dry onions and microwave just
another minute or so. Serves 4.
|Dublin Stewed Pork
|1-1/2 pounds pork pieces
2 pounds cooking apples
1 pound onions
1 tablespoon brown sugar
|3/4 cup stock or water
3/4 cup cream
1 seasoned flour
1 tablespoon butter or bacon fat
|Chop meat and onion into
rough pieces. Melt the fat or butter and gently fry the onion
until tender. Remove from pan. Toss the meat in seasoned flour
and brown quickly in fat. Place onions, meat, stock and sugar in
a pot and simmer, covered, for 1-1/2 hours. Peel, core and chop
apples. Add to pot. Continue cooking until apples are just
cooked but not too mushy. Add cream and heat through. Don not
boil! Correct seasoning, and serve.
Makes 4 servings.
|St Patrick Cheesy Ham
|2 cups broccoli flowerets,
fresh or frozen, thawed
6 ounzes cheddar cheese, divided
1 1/2 cups coarsely chopped ham
1 1/2 cups rotini, cooked, drained
1/2 cup salad dressing
|1/4 cup green pepper,
1/4 cup red pepper, chopped
1/4 cup milk
3/4 cup seasoned croutons, optional
|Heat oven to 350°F. Mix
all ingredients except 1/2 cup of the cheese and croutons. Spoon
into 1 1/2-quart casserole. Sprinkle with remaining 1/2 cup
cheese and croutons. Bake 30 minutes or until thoroughly heated.
Makes 6 servings.
Note: Using Microwave: Prepare as directed. Spoon into 1
1/2-quart microwave-safe casserole. Sprinkle with remaining 1/2
cup cheese. Microwave on high 8 to 10 minutes or until
thoroughly heated. Top with croutons. Yield: 6 servings.
