Roasted Turkey

1 tablespoon Italian seasoning
2 teaspoons seasoning salt
1 teaspoon dry ground mustard
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 12 pound turkey fresh or frozen, thawed |
2 bay leaves
2 stalks of celery
1 onion, quartered
1 small orange, quartered
1 to 2 tablespoons olive oil |
Preheat oven to 325°F. Combine first 5 ingredients; set
aside. Wash turkey and remove giblets. Place turkey on a rack in
shallow baking pan. Sprinkle 2 teaspoons of seasoning mixture
inside the turkey. Stuff bay leaves, celery stalks, onion and
orange inside the turkey. Rub oil and remaining seasoning
mixture over the entire surface of the turkey. Loosely tent with
foil. Bake 3-1/2 to 4 hours or until meat thermometer reads 180
degrees, in thigh. Baste several times with pan juices. Remove
foil during the last 30 minutes of cooking. Serves 10-12. |
Bobotie

2 tablespoons oil
1/2 tablespoon butter
500 grams mince (combination of beef and lamb)
Spices
2 teaspoons curry powder
1 teaspoon coriander
1/2 teaspoon ginger
1/2 teaspoon mixed herbs
1 teaspoon turmeric
1/2 teaspoon cinnamon
1 teaspoon sugar
pinch red chili powder or cayenne pepper
2 onions -- chopped
2 cloves crushed garlic
1 cup grated carrot or apple |
Seasoning
1 tablespoon salt
1/4 teaspoon pepper
1 tablespoon wine vinegar
2 slices white bread
2 bay or lemon leaves
Topping
1 cup sour cream
1/2 teaspoon salt
pinch pepper
2 eggs

Stir-fry the mince in the oil and butter until loose and crumbly,
using a fork. Add the chopped onion and stir-fry, until limp and
glazed. Add the garlic, grated carrot and spices. Continue
cooking very briefly to develop all flavours. Season with salt,
pepper and wine vinegar or lemon juice to taste. Soak white
bread in water, lightly squeeze out water and mash with a fork,
then add to mixture. Spread the mixture into a flat ovenproof
dish. Tuck the bay or lemon leaves into the mixture. Beat all
the ingredients for the topping with a fork. Pour the topping
over the bobotie. Bake uncovered at 190°C (375°F) for 35
minutes, until the custard topping is firm and golden-brown.
Serve with yellow rice, chutney, sliced bananas and a diced
tomato and onion sambal. |
Easy Turkey Casserole

2 cans chicken noodle soup
1 can cream of mushroom soup
2 eggs
1 package Stove Top Stuffing |
3 cups cooked turkey (diced)
6 tablespoons melted margarine (3/4 a stick)
2 tablespoons melted margarine (1/4 a stick)
1/2 cup cornflakes (crushed) |
Prepare Stove Top Stuffing according to package directions.
Preheat oven to 350°F. In large buttered casserole dish,
combine turkey
noodle soup, mushroom soup, eggs, stuffing, chicken and 6
tablespoons margarine;
mix well. In small bowl, combine 2 tablespoons margarine and
cornflakes; sprinkle
on top of casserole. Bake for 1 hour. Serves 4. |
